Fruit in a Rich Syrup
(Glyko tou koutaliou)
| This
kind of sweet can be made with almost all fruits by adding sugar. The Greek cuisine
includes many varieties. Their great advantage is that they can be kept out of
the refrigerator for a long time. We here propose strawberry in a rich syrup. |
INGREDIENTS
1 1/2 kilos strawberries, not too ripe
Juice of 3 lemons
1 1/2
kilos sugar
2 cups (480ml) water
2 teaspoons vanilla (optional) PREPARATION
Remove the stalks, wash the strawberries and lay on a towel to dry. Place
them in a bowl, pour the lemon juice over them and stir lightly. Put the
water and the sugar into a saucepan and stir constantly into a syrup. Add the
strawberries and bring to a boil. Take them off the heat and allow to cool. Place
the strawberries onto a tray and bring the syrup to a boil again. Remove the syrup
from the heat add the strawberries again and the vanilla. Let them cool off completely
before closing them into a jar. | |
