Meat Pie (Kreatopita)
| Greeks love all kinds of pies. Meat pies
are a speciality of the Ionian Islands. |
INGREDIENTS (10 Portions)
1300 grams of tender lamb 1 1/2 cups meat stock 300 grams grated feta
cheese 1/2 cup rice 2 peeled potatoes cut into cubes 1 onion finely
chopped 2 tablespoons tomato paste 4 hard boiled eggs 3 tablespoons
butter 3 tablespoons olive oil some finely chopped parsley salt
and pepper to taste 1 - 2 garlic cloves spearmint cinnamon
1 package (1/2 kilo) light puff pastry. PREPARATION Even though
the original recipe is made with lamb, you can use lean veal or pork, a combination
of both or minced beef or minced veal. Cut the meat into small cubes and
mix thoroughly with all the ingredients except for the eggs, the stock and the
butter. Line an oiled baking pan with half of the pastry leaves brushing
each one with melted butter. Make sure they overlap the edge of the pan all round
so that they can be folded over later to seal the filling. Lay the mixture evenly
onto the pastry and pour in the meat stock. Finally add the sliced hard boiled
eggs. Cover the filling with the remaining pastry leaves, again brushing
each one with melted butter. Moisten the edges of the bottom layers and fold over.
Now brush all of the top with melted butter. Preheat the oven at 220 C and bake
for 30 minutes then for another hour at 190 C. | |
